On hot summer days Easy Dessert Recipes are a treat that go down well after dinner. When it’s scorching hot the last thing you want to be doing In your kitchen is turning on the oven so the best solution is to create a cool frozen treat.

I present to you the flavor sensation known as the strawberry vanilla swirl. This takes only around 10 minutes to make and a further 20 minutes to set in the freezer. This allows you to either make it in advance or on the day you would like to eat it.

Ingredients (serves 4 people)

· 1 x punnet of fresh strawberries, washed and cut into slices.
· 2 tsp caster sugar to make the dish sweet
· 300g of vanilla ice-cream (remove from fridge 5mins before use )

Preparation Method

1. Put to one side a 1/3 cup of the fresh strawberries. Combine the remaining strawberry and the caster sugar into a large bowl.

2. Add the soft ice cream and use a metal spoon to fold until just combined.

3. Spoon among four 125ml (1/2-cup) capacity ramekins and level the surface. Cover with foil and place in the freezer for 20 minutes or until it’s set.

4. Place the frozen desserts onto serving plates and garnish with the reserved strawberry.

Serve and enjoy immediately.
